Craving those warm fall spices but not ready to give up your summer fruits yet? This quick compote will hit the spot. You’ll cut up peaches, collect the juices from them, and turn them into a rich, spicy glaze that you’ll add back to the peaches.
This is great over pancakes, biscuits, fresh bread, rice pudding, ice cream, or with a spot of cheesecake as seen here. I just used a Daiya New York Cheesecake in this case. Or, make a bigger batch and pour into a pre-baked pie crust. Whatever you do, let me know how you like it and what adjustments you made!

Ginger Peach Compote
Sliced, spiced, and richly glazed peach topping for pancakes, biscuits, cheesecakes, and more.

Ingredients
Adjust to taste!
2 peaches
1 T lemon juice
2 T sugar
a pinch of salt
water
additional sugar
additional lemon juice
1/4t cinnamon
1/4t ground ginger
1/8t cardamom
2t corn starch
1/2t vanilla extract
1 T plant butter (optional)
Instructions

Prep: Peel and segment each peach into eights, then slice again into thin pieces and place in a medium glass bowl.
Add lemon juice, 2T of the sugar, and a pinch of salt. Stir, cover, and refrigerate for an hour.

Collect juice from the peaches. Add enough water to get half a cup, and add an additional tablespoon of sugar. Taste the peaches and your juice mix to determine how much sugar you want to add, or whether you need a bit more lemon juice, or even just a tiny pinch of salt.

Now add your spices. I’d start with these proportions, take a tiny taste again, and add more as you’d like.
You’ll want to complement the peaches without overwhelming them, but bear in mind any spiciness you add now will be toned down in the last steps when you pour it all back over the peaches. So go ahead and make it deliciously warm.

Finally, stir in the two teaspoons of corn starch, and pour your seasoned juice into a pan.
Heat on medium high, stirring frequently. The liquid will turn clear just before it thickens, then you really only need to stir for a few more seconds.
Remove this from the heat, add vanilla, and add butter and stir til it’s melted if you want that and will be serving it right away. Then pour it over your peach slices and stir.
