You can probably make a double batch and use a 13×9 pan, but then you’ll just feel twice as guilty when polish them off.
I’ve been trying to find a good recipe for peanut butter chocolate chip brownies. I guess some might call them blondies because they really aren’t very brown. Well, brownies or blondies, either way, I was having all kinds of trouble finding a recipe I liked.
So I finally made up my own recipe. I just tried it tonight and they’re great! Plus I didn’t get a lot of dishes dirty in the process. Ease of cleanup is as important to me as having an easy recipe. And this recipe is easy.
You’ll need a 375º oven and…
1/4 cup each
· white sugar
· brown sugar
· butter or margarine (1/2 of a stick)
· quick cooking rolled oats
· chunky peanut butter (creamy would probably work too)
· milk chocolate chips or chopped chocolate bar
1/4 teaspoon each
· salt
· baking soda
· vanilla
Plus…
· 3/4 cup flour
· and 1 egg
Combine the sugars, butter, egg, and vanilla in a medium bowl. Add the flour, salt, and baking soda. Stir in the oats, then the peanut butter, and finally add the chocolate chips. Spread it all into a 9×9 pan and bake it for 12-16 minutes or until the top just begins to brown. Cut it into 16 bars after it has cooled off a bit.
Now all you need is a tall glass of milk and some family or friends to share with, and you’re set! Let me know how you like them. 🙂
