My partner got a Whynter automatic ice cream maker for Christmas. The booklet didn’t include recipes or tips for vegan and dairy-free ice creams, so we’re figuring it our own and sharing what we’ve learned here. If you’ve got tips, please feel free to share them in the comments!
For now, our favorite by far is this spectacular vegan ice cream inspired by apple pie, and I’ll share a recipe for easy vegan chocolate ice cream below that, too. Each of these makes 3 finished pints, which fit perfectly in the 1.6 Quart ice cream maker we’ve got.
Spiced Apple Ice Cream, Vegan and Gluten Free
Ingredients:
– 2 medium apples
– 1/2 teaspoon lemon juice
– 2 tablespoons brown sugar
– 1/4 teaspoon cinnamon
– 1/8 teaspoon nutmeg
– pinch of salt
– 1/2 teaspoon vanilla
– 1 C soy milk
– 1 C Country Crock Plant Cream
– 3 tablespoons real maple syrup, adjusting to taste
– 1/4 cup chopped pecans (optional)
Steps:
- Dice the apples small, sprinkling with lemon juice as you go
- Add to a small sauce pan with brown sugar, spices, and a pinch of table salt
- Cook on medium low until apples are tender
- Turn off heat and add vanilla, soy milk, and cream
- Add half of the maple syrup then more to taste, aiming for a mixture that’s slightly sweeter than the ice cream you want
- Pour into the the ice cream bucket and start the mixer for 30 minutes
- Add chopped pecans, if desired, and restart for another 30 minutes
- Remove & place in freezer for at least 1 hour
yields ~3 pints
Notes:
- TASTE YOUR MIX before freezing it and adjust seasonings to taste. Our apples were ripe, sweet, and appley, and our soymilk was not unsweetened, so if you need more maple syrup, no judgement here.
- I used brown sugar AND maple syrup because I wanted my apples to break down in the sugar, and I also wanted to adjust sweetness in the end without needing to dissolve sugar crystals. If you choose to use just brown sugar, I suggest cooking it with with the apples.
- The apple flavor was initially subtle, but developed more in the freezer. It was fantastic the next day. We like taking ours out of the mixer bucket and gently packing it into Weck jars.
- This would probably come out even more delicious with just cream, but I’ve not tested that yet. If you try that, or if you try other dairy-free options, let me know how it goes!
- Nuts are, of course, optional; ours were unsalted and raw. If you skip them, you can probably just set the timer for 60 minutes. You could probably also set it for less time if you cool the mixture first.
- Initially I was going to add my vegan/GF “ritz” type crackers from Schär to taste like pie crust, but I decided they would be better on the side.
- And, just a general tip to avoid spills and stuck buckets, I recommend pouring directly into the removable bowl, and making sure the bowl is free of any drips and moisture on the outside.
Easy Vegan Chocolate Ice Cream
Ingredients:
- 1 5.9oz box of JELL-O Instant Chocolate Pudding
- 3 Cups Soy Milk
Steps
- Blend ingredients in a blender
- Pour into removal ice cream bucket, then place in Whynter machine
- Run ice cream maker for 40 minutes
- Enjoy as-is, or pack into jars to freeze

Notes on Hard Ice Cream vs Soft Serve:
We were talking about vegan ice creams when we first met (as newly enamored couples do) and my love mentioned dreams of the Whynter automatic ice cream maker with a compressor built in: no hand-churning, no freezing the bowl, just set it and go.
We had both made vegan soft-serve ice cream in our Blendtecs. That’s yummy too, but this is a totally different texture. I’ve heard the terms “soft ice cream” vs “hard ice cream”– this is scoopable because of how it’s made. And if you’ve ever tried it, you know that you can’t just take a soft-serve ice cream and freeze it for the same results.
Like any dedicated ice cream maker, Whynter churns the ice cream as it freezes, so if you start with a nice creamy base, you’ll get a delicious, scoop-friendly result. I don’t have any vegan gluten free cones around right now, but once we have some, I’ll update the picture.
